Today, plant-powered salads are all about bold vegetables, flavors, textures, and nutrition. Some of my favorite salad ingredients include pungent greens like kale and arugula, hearty pulses like chickpeas and lentils, sweet fruits like berries and cherries, crunchy veggies like cauliflower and snow peas, and a sassy vinaigrette using rich spice and herb blends.
